Does mail::audit or procmail have to be installed on my hosting company's server or can I just install it on my own linux box? I'm not sure what platform my hosting company uses.

What platform is this on?  Windows or Linux. If you use sendmail, it's
easy to create an alias to redirect the message to your program. Plus
it takes all the complexity out of trying to have it be an MTA
